Potato Love! I have always loved potatoes. I’ve even read about a few people who have experimented with a mono-food diet for 30 days and even a year. I’ve read about marathoners eating nothing but potatoes, but Jeannine Elder is the first person I got to visit with one-on-one and learn her “why” behind her system called “The Potato Reset”. Jeannine Elder is a graphic designer, illustrator, health advocate and YouTuber on a mission to empower people in their health and lead them to a healthy whole foods plant based way of eating.
Jeannine has been a junk foodie her entire life which ultimately lead to health complications in her early 30s – eczema, gallstones and severe hypothyroidism due to Hashimoto’s disease. She switched to a plant based diet with her husband in May of 2011 after watching the documentary Forks Over Knives. Switching to plant based wasn’t an instant success story for her because she was always managed to find plant based junk food. It wasn’t until she focused more on whole foods that she felt a significant increase in energy and overall well being.
In an effort to simplify and prove once and for all that a carbohydrate-rich diet does not cause weight gain or prevent weight loss, in February 2017, she ate only potatoes for an entire month and as a result, lost 8 pounds, diminished junk food cravings and reset her taste buds.
Since then she has lost 35 pounds eating a potato-based diet and inspired many others to do the same. She has helped women with autoimmune conditions realize that they too can reach their healthy weight with the power of the potato.
Jeannine lives in Cambridge, Ontario, Canada with her husband Scott, hosted by her wonderful parents Jim and Debbie. The house is even cozier with their collective herd of animals: Squeaky, Rumor, Molly, Penny, June Bug and Lyla.
